Hi, friends! It’s nice to be able to return today to share several favorite. I missed the link last Friday, and then I also missed the ordinary Hello Monday link, where I usually recap my weekend. So, I am very happy to be here today, chasing and sharing a number of things that I did not get the chance to post before. Thank you very much for stopping by!
Food!
My favorite thing is always food! And, one of the bad sides to winter (I try hard to stay positive about cold) is to enjoy all the food that is comfortable and comfortable.
Over the past few weeks, we have enjoyed some delicious and warm things like grilled meat, served with rice, because my husband and children are all about rice. I also like rice, but I myself am more like a potato girl. Combo two carbohydrates are very good! I highly recommend it.
Chicken soup and vegetables with the first inhabitants who are crazy.
Chicken, tomato sundried, and pesto rice.
I really see this recipe on Instagram rolls – the instructions that are said to only combine everything and bake it in the oven. Years ago, I tried to make rice in the oven, and that was a disaster. And I know from the experience that chicken breast can be tough easily if it is not cooked correctly – I also make that mistake.
So, I decided to do it in my own way. I cooked rice with pesto, onion, garlic, sundried tomatoes, and chicken broth in the rice cooker. Then I boiled the chicken separately and mixed everything in the end. I also added more stock than the original recipe, and it tastes good. Two thumbs up from everyone for this “Create” dish.
All types of banana bread
My husband Steve has grilled all types of banana bread. We have bananas and walnuts, bananas and coconuts, bananas and pecans, and even bananas and raspberries. Each version becomes the winner. Walk well with hot drinks!
Even though he was busy baking things, he still continued to lose weight. He moved from food replacement and is now focused on the control of portions and eating to taste (including banana bread). He was very determined to avoid knee replacement in his right knee, and weight loss was the key. A few days ago, he told me that for every kilo losing, it was four kilos less pressure on your knees. Wow – it’s enough motivating!
So far, his right knee has survived well, and with weight loss, everything looks great. His left knee has fully recovered from the substitute he owned last year. And now he regularly walks and swimming as part of his health journey. He has an annual follow -up with the surgeon at the end of this month. I am sure the surgeon will be impressed with his progress. Go, Steve!
Masterchef
I like watching Masterchef when I make dinner. I am not really an expert from anything, but watching this excited chef always inspires me.
Melbourne
I have the most amazing time with my cousin in Melbourne last week. If you miss the recap, here it is. As I shared many times before, I didn’t like to fly. But I am very proud of myself because I say yes for adventure and not to be afraid.
When my cousin reached a few weeks ago with the idea of going to Melbourne, I would admit that my initial reaction was, “Ummm, no, I don’t think so.” But then I stopped asking myself, why? Why don’t I think so? Well, there is a problem on plane riding again – yes! Our big journey in January made me listen to Podcast Lovefly for months just for festive. Then that also means taking work leave for a week. But that was not a problem because I had collected a lot of leave for years, and my director was more than happy to agree. Plus, I don’t have a child at home who needs me. So obviously, there is no reason not to go.
Our main plan to go to Melbourne is to see Musical footloose – Big fans of the 80s here! In the end, the musical was sweet, but exploring Melbourne turned out to be a real spotlight.
My cousin offered me a window seat on the plane, but it was an easy pass for me. When he went to the restroom, I closed this photo with my eyes closed. It does look beautiful, right? Especially now, when I see it here on my computer with both legs safely on the ground.
My cuz
I like my cousin J – She’s amazing! Here we in 1984, he sat on my lap – please ignore my hair, it was in the eighties. He is as sweet as the button! Growing up, we spent a lot of time together, and I was glad I had to hang out with him and his brother.
Over the years (and for many years!), There is a season where we do not see many other, thanks to living in various countries or states. But since he moved back to Sydney with his family a few years ago, we have met each other regularly, and I can’t be happier.
Cousin J, if you ever read this … Please don’t move far away – haha! (Joking … not joking.)
When we were in Melbourne, he entered the supermarket and came out with a curved can that said “Cuz.” How cool is that?
We enjoyed it with our pizza at Sal’s.
Blogging
Blogging is my favorite, and I have gone since 2021 – which is now a few years now, although not during several other beautiful bloggers that I have followed. Until recently, I thought I had posted quite regularly, but lately I began to feel a little rush and poor time. I work full time as an early childhood educator and usually squeeze blogging during lunch breaks and again when I go home.
I used to be at home mostly at night alone, because my child was working, uni, or gym. My husband worked very crazy from the afternoon to the very late. I will go home, do my assignments, then jump to the computer and create a blog as long as I want. That is a real sanity for me and really helps during the early stages of sadness after losing my mother. Returning to an empty house without anything to take care of is heartbreaking. So blogging will definitely save me.
Now we are in another season, where my husband and schedule have changed, and we have more time together at night. It is fun that we have the chance to have dinner and watch TV with four nights out of seven, not just one night – or sometimes not at all.
So even though I still spend time writing a blog at night, I didn’t do it as much as it first. I don’t want to release a new flow of this beautiful family time. Also, we watch Better contact sauloutstanding!
I thought I tried to find my new rhythm, but I wasn’t sure what it was. So far, that means I have surrendered several links and dropped the ball on the others. At first, I was all like, “Oh no!” Because I really like to join a beautiful community. But I know this is only one season, and I will soon find the right balance.
By the way, thank you very much for reading together – If you succeed until the end, you are a champion! That is a longer post than I meant. My husband was called to work earlier than usual and will do a shift that is late tonight, which means I’m alone at home again – haha!
I hope your weekend is fun!
Oh yes, this weekend we have a long one to celebrate the King’s birthday – Yay!
